Lemon Cupcakes


These are very easy to make and you could even cheat and use the recipe on the side of the packet of self raising flour (Sainsburys own brand) and just add lemon zest.

Cake mix:
6oz unsalted butter
6oz caster sugar
6 oz self raising flour
3 medium eggs
zest of 2 lemons
1tsp baking powder

Icing:
Juice of two lemons
icing sugar

For the cake mix, preheat the oven to gas mark 5. Wisk the butter and sugar together till you get a smooth mix. Then sift the flour and baking powder into the sugar and butter mix and break in the eggs, whisk this all in together till you get a very pale cake mix. Grate the zest of two lemons and stir this intot he cake mix. Spoon this mixture into cupcake cases till they are about two thirds full. Put in the oven for around 25 mins, to check the cakes are baked, put in a metal knife, if it comes out clean then they are ready.

Leave the cakes to cook on a wire rack. To make the icing you need to put the lemon juice into a large mixing bowl. Pour in a large heap of icing sugar and stir in with a spoon, keep doing this until you have a thick paste from the icing. If its too runny it will run down the side of the cakes. Spoon the icing over each cupcake, to make it smooth you can shake the cakes from side to side.

If you want to decorate these then any sprinkle or sweet should look good, or you can add some food colouring to the icing mix. These are very popular little cakes and very easy to make.
